I done a little searching for an xbox cable and no luck. It seems an adapter or an actual hdtv is what you need.
This article about the
Neoya X2VGA adapter to convert the signal to vga says the xbox will display at 480i on startup and you'll have to go to xbox live and download a patch so you won't have to hook up your xbox to a tv and then start a game in the 480p resolution. This article explains a lot about the different gaming formats too.
I don't have one of these and they do make different adapters just for gaming consoles.
HERE is the hookup diagram for the Neoya.
THIS article from Neoya's website says the X2VGA converter will display 480i at half screen and hold button down on it to view the other half. So the Playstation 2 can be compatable to use on it. It's about 65.00 through their site.
