I'll clarify a few things here:
1. Changing your Xbox from PAL to NTSC will NOT affect your Xbox Live account. Since this is all that's needed to enable the HD resolutions, disconnect from the network/Xbox live, do the mod and you'll be ok from then on. A lot of people do this who are using Xbox live on a daily basis. The video mode is not one of the things Xbox checks from the EEPROM information. They currently check the Live Key, Serial Number and HDD Firmware ID. AFAIK They have no plans to check video mode.
Better still, if you know someone who has a copy of Splinter Cell (original) with a memory card and access to a chipped Xbox, you can change the output of an Xbox without even opening it up.
2. A few games do support 1080i - MX unleashed is one I can name since I've tried it successfully. Syberia also does, but looks better in 720p. There's a few databases online which list the supported titles. Here's one:

I presume not?
When I first built my PJ,I was going to try and hook up my xbox,but decided it would be alot easier to wait for the 360.It seems to be alot easier,especially with the vga cable.No need for an N6,etc,etc.
