Would it be worth buying maybe 2 or 3 of these to try and scavenge parts to make one working projector for <$60?

Any idea of just how dead these projectors are? I wouldn't want to get 3 that are all missing major components.

The most likely failure for these will be the ballast. It is highly likely that even if you buy three of these, you'll get 3 with dead ballasts. The LCDs will likely be good, and the lamps as well.

On the plus side, at least one person that I know of has used a standard 150W MH ballast with these lamps and has a successful projection with it. The projector itself isn't that bad, but the QC on them was not good at all.
