I believe that there is also an Epia ITX motherbard that has an LVDS controller on the board itself that could be used the same way, but there wasn't really any documentation about it in the manual. Plus the board itself wasn't that great.

Actually, a bunch of the ITX, mini ITX and Pico ITX boards have it on them, but, you do need to add a small daughter card to it that then connects to an LCD panel via an LVDS cable that they do not supply. You are on your own in making it work! And, like you said, there isn't any real info available. You have to dig for it in various forums.
But, you could build a small HTPC into a projector with it.

And I was thinking exactly that when I was looking at the board, but the CPU was directly attached and didn't perform that well...
